This was my first 4th of July after being diagnosed.. and naturally after starting my healthy eating habits. So.... to celebrate Independence Day, I wanted make an apple pie. Yeah.. in 100 degree heat.
Here's what I came up with:
CRUST:
1 cup almonds
1 cup cashew
1 cup dates
2 tsp vanilla
1 tsp cinnamon
Blend together and then mash into a pie pan (lightly greased with coconut oil) (Yes.. this is a 'no bake' crust)
PIE:
8 apples, pealed and sliced
A dash of water
LOTS of cinnamon
2 tbsp vanilla
Boil till apples are soft
Pour apples into pie crust. Garnish with pecans. Enjoy. :)
