Day 11 ends.. the light is getting closer!
- 2 cups Brown Rice Flour
- ½ cup water (Go easy! It may be less)
- 2 cooked, and well blended golden potatoes
- 1 tbsp. Chopped basil
- 1 tbsp. Chopped oregano
- Pinch of salt
Filling:
- 1 cup Finely chopped mushroom
- ¼ cup chopped Onion
- 1 cup finely chopped Broccoli
- 1 cup finely chopped kale
- 4 Garlic cloves, chopped
- ½ cup water (maybe more?…)
- 2-3 tbsp. Tamari
- 1 tbsp. Chopped basil
- 1 tbsp. Chopped oregano
- 1 tbsp. Chopped Rosemary
- 1 cup Quinoa
- Pinch of pepper and cayenne
Outer Sauce:
- 2 cups spinach
- 1 clove garlic
- 1 tbsp. Basil
- 1 tbsp. Flax seed
- ½ cup cashews
- ¼ cup walnuts
- ¼ cup water
- Pinch of salt
- Chopped rosemary
Preparing the Filling:
Sautee mushrooms, onion, broccoli, kale, garlic, and tamari in water until soft. Remove from heat and add basil, oregano, rosemary. (Optional: Take about 1/3 of your mixture and lightly blend in a blender. Add this back to the mixture for a slightly creamy texture). Add quinoa. Add pepper and/or cayenne for a little kick if desired.
Preparing the Pasta:
Mix dough ingredients together gently until soft and pliable. Split evenly in two, and roll out thin on floured surface, so you end up with two square sheets.
Assembling the Raviolis:
On one of your rolled out sheets, spoon the filling mixture into evenly spaced out mounds (about two inches apart). Cover with the other sheet of pasta. Cut raviolis apart, and with a fork, gently push down on their edges to seal them together (and to give a decorative look)
VERY lightly brush the raviolis with olive oil and bake at 350o until brown. (May need to flip them halfway through)
Outer Sauce:
Blend all ingredients (except rosemary) in blender until smooth. Add more water if necessary.
Final Touch:Place raviolis in shallow bowls and pour sauce on top. Garnish with the chopped rosemary. (Maybe some cilantro too)
Oh yeah..... Can't wait to try that!!!

Getting ready to go!
I'm toting my keyboard along and plan on getting a lot of composing done, among other things. :)
In preparation for the fast, I've been eating nothing but fruits and veggies for the past two days. It's torture, I tell ya... torture. Not eating? No problem... Eating healthy? No problem... But make an amazing salad and think, "Oo! Quinoa would be great in this!.. And some sliced almonds!"..no such luck!
Here's an example:

Zucchini
Asparagus
Onion
Avocado
Spinach
Lettuce
Arugula
Of course.... it was still fantastic... but it could have been even MORE fantastic! Ah well.... Almost there.....

Hot Apple Pie for the 4th of July
Here's what I came up with:
CRUST:
1 cup almonds
1 cup cashew
1 cup dates
2 tsp vanilla
1 tsp cinnamon
Blend together and then mash into a pie pan (lightly greased with coconut oil) (Yes.. this is a 'no bake' crust)
PIE:
8 apples, pealed and sliced
A dash of water
LOTS of cinnamon
2 tbsp vanilla
Boil till apples are soft
Pour apples into pie crust. Garnish with pecans. Enjoy. :)
One week till the journey begins
My platelet count has been cruising around 14 for the past 2 months now...or at least... it was... I haven't had a CBC in 3 weeks, so I don't fully know, really. It could be lower! Ha! But no.. I don't think so. Judging by my last *ahem*..cycle.. I'm gunna say it's around 14. However, no more bruising... unless I whack myself against something hard. And only some petiche on my legs. [I know I've eaten too much garlic (or other blood thinners) when there's more little red dots speckled across my calves].
I've also been off the Prednisone for 2 months. Can I get a "Hallelujah!"? Phew-wee! Never again, I tell you....... never again. Last semester is just one enormous blur... honestly. I played in 3 or 4 recitals, and I barley remember them. Even my best friends! Good grief, what a mess I was! I'm so thankful things are returning to normal.. Maybe not my platelet count, but at least my mental and emotional state, thank you kindly!
Along those lines: My dream last night, a bunch of music school buddies and myself taxied in a giant plastic toy plane to some park and had a picnic. There were a handful of professors there as well, and one of them (Mike) pointed out how healthy I was looking, and the rest concurred with things like "you have more energy" "healthy glow" etc... (these have all been real comments I've been getting from folks). It was a pleasant dream.. nice to see some old friends. :) Heh heh heh.
I love the fact that 145 lbs is now a higher weight for me. Wow what a concept! I've been in the 155 range for so long.. It's just crazy to be 142. And it's not going to stop there! In four weeks, I will be down to what I should be... errr.... which is somewhere in the 120's. Oooo! I like the look of that. 120. Nice.
